chocolatecakerollHey everyone! I absolutely LOVE this recipe! It looks just like a Lil’ Debbie Swiss Cake Roll which is my absolute favorite! Try it out and let me know if you like it!

Chocolate Peppermint Ice Cream Cake

Ingredients:

Cake:

* 1/2 cup(s) cake flour (not self-rising)
* 1/3 cup(s) unsweetened cocoa powder
* 3/4 teaspoon(s) baking powder
* 1/4 teaspoon(s) salt
* 5 large eggs, at room temperature
* 3/4 cup(s) granulated sugar
* 1 1/2 teaspoon(s) vanilla extract
* 1 1/2 teaspoon(s) peppermint extract

Filling:

* 2 pint(s) peppermint-bark ice cream, softened

Glaze:

* 1/2 cup(s) heavy cream
* 6 ounce(s) bittersweet or semisweet chocolate, chopped
* 2 tablespoon(s) dark corn syrup
* 1 1/2 teaspoon(s) vanilla extract
* 1 1/2 teaspoon(s) peppermint extract

Garnish:

* Dark or white chocolate curls or shavings
* Confectioners’ sugar

Chocolate, Chocolate, and More Chocolate!

thanks_11_bg_112802Willie Wonka, eat your heart out! On January 29, a chocolate theme park will be opening in Beijing, China, near the Olympic Stadium. At an amazing 215, 000 square feet, the park will feature amazing creations such as life-size replicas of the Terracotta warriors and a slice of the Great Wall of China.

 The park hopes to have a million visitors by April. They can’t really go beyond that, because the summer sun would be detrimental to all of the chocolate, even though they will be stored in temperature controlled areas. Could you imagine size of the mudslide if all of that chocolate melted? (Pun wholly intended!)
