Recipe of the Week — Microwave Meals
We all lead busy lives, and sometimes don’t have time to use an hour or two
of our time to wait on food from the oven. So when you’re short on time, but still want the deliciousness of a home cooked meal, why not try this yummy recipe?
MICROWAVE DEEP DISH APPLE PIE
1 tbsp. sugar
1/2 tsp. ground cinnamon
5 c. sliced peeled apples
1/2 c. sugar
2 tbsp. all-purpose flour
1/2 tsp. ground cinnamon or cloves
3/4 c. buttermilk biscuit baking mix
1/3 c. milk
2 tbsp. sugar
Mix 1 tablespoon sugar and 1/2 teaspoon cinnamon; set aside. Combine apples, 1/2 cup sugar, the flour and 1/2 teaspoon cinnamon or cloves in 1 quart casserole. Cover. Microwave at High until apples are tender and sauce is bubbly, 3 to 4 minutes. Mix buttermilk biscuit mix, milk and 2 tablespoons sugar just until moistened. Drop by spoonfuls onto hot apple mixture. Sprinkle with cinnamon-sugar mixture. Microwave at High until topping is set, 4 to 6 minutes. Serve with whipped cream, if desired. Makes 4 to 6 servings.
