Recipe of the Week — Microwave Meals

We all lead busy lives, and sometimes don’t have time to use an hour or twocountry_apple_1467665_l of our time to wait on food from the oven. So when you’re short on time, but still want the deliciousness of a home cooked meal, why not try this yummy recipe?

 

MICROWAVE DEEP DISH APPLE PIE  

 1 tbsp. sugar

1/2 tsp. ground cinnamon

5 c. sliced peeled apples

1/2 c. sugar

2 tbsp. all-purpose flour

1/2 tsp. ground cinnamon or cloves

3/4 c. buttermilk biscuit baking mix

1/3 c. milk

2 tbsp. sugar

 Mix 1 tablespoon sugar and 1/2 teaspoon cinnamon; set aside. Combine apples, 1/2 cup sugar, the flour and 1/2 teaspoon cinnamon or cloves in 1 quart casserole. Cover. Microwave at High until apples are tender and sauce is bubbly, 3 to 4 minutes. Mix buttermilk biscuit mix, milk and 2 tablespoons sugar just until moistened. Drop by spoonfuls onto hot apple mixture. Sprinkle with cinnamon-sugar mixture. Microwave at High until topping is set, 4 to 6 minutes. Serve with whipped cream, if desired. Makes 4 to 6 servings.
